On Monday, daughter worked from home. I got up with her and made her a cup of coffee and made myself a cup of tea. Then, while she worked, I sat outside in the sunshine (it was warmer outside than inside the house) and read my morning prayers. Later, I watered the back garden.
For brunch, we had leftover waffles with bacon and syrup.
In the afternoon, I read a few blogs and relaxed. Then, it was time for tea and news. Later, I took the trash cans to the curb for pick up in the morning.
For dinner, I cooked a pot of rice, sauteed green beans, and peeled and sliced boiled beets to have with leftover chicken curry and tomato chutney. There were the last of the Asian pears and strawberries for dessert. I also had some yogurt with coconut treacle (daughter doesn't like yogurt).
I haven't made a formal meal plan for this week, but, there are leftovers (rice, salmon, chicken curry, a bit of sauteed green beans and sliced beets), and I am planning to make a chicken stew for Wednesday's dinner as daughter is expecting one of her friends to come to dinner. I have some bacon-wrapped hot dogs that I am planning to serve for dinner, one night (have to buy some hot dog buns) and there are frozen meatballs that can be had for dinner, another night.
Brunches will include scrambled eggs, toast, and bacon (Tuesday), cereal and milk, egg salad sandwiches, French toast.
On Monday, I was grateful for:
- Time spent with my daughter
- A sunny day
- Water for the garden
- Emails from friends
- Working appliances
Monday's joyful activities included spending time with my daughter and reading blogs.
Plans for Tuesday include watching election results!

Working appliances are indeed something to be thankful for. Currently, all of ours are working, and it's good to remind ourselves how lucky we are for the help they give our chores.

DeleteI've never had a bacon-wrapped hot dog, nor a Pogo, for that matter. There are still new things to try! I'm building up a collection of individual portions and listing possibilities for when DH goes on a business trip soon. I don't want to waste time deciding what to cook, when I could be decluttering or getting up to other mischief!
ReplyDeleteTo be honest, I've not had a bacon-wrapped hot dog, myself, and I imagine they will be super salty. I was given the package I currently have and I froze them so daughter could try them, too. Pogos are known as corndogs, here, and I'm not a big fan of them, but, my daughter likes them. :)
DeleteI like the idea of building up a collection of individual portions to have when your DH is away on his trip. It'll make meal prep for one an easy thing to do and give you plenty of time to get up to mischief! :D
So glad you were able to enjoy the sunshine outside. While at daughter's in Minnesota we had snow on Halloween! It is warmer back here in Michigan though. I was not ready for a round of snow already! I hope you enjoy your daughter's visit.
