This was the plan for Week 2:
Breakfasts/Brunches: Bagels and cream cheese✔, cinnamon rolls✔, leftover noodles from the cup noodles with some leftover shredded turkey added to it (Monday)✔, scrambled eggs with toast or fried potatoes, lasagna✔, biscuits and cream cheese, cereal and milk (imagine that! Can't remember the last time I had cereal and milk for breakfast!)
Dinners:
- Leftover macaroni and cheese with the last of the shredded sauteed turkey, salad (Monday)✔
- Leftover macaroni and cheese with chicken curry✔
- Rice, chicken curry, dhal, cucumber slices✔
- Ham and split pea soup✔ drop biscuits✔
- Ground beef with mashed potatoes, broccoli rice and dhal curry✔
- Leftovers✔
There was, also, yogurt for dessert.
I start off Week 3 with leftover ham and split pea soup, leftover biscuits, a small serving of leftover rice, and leftover ground beef mixture (to which, I added the leftover dhal curry). Plus an almost full dish of yogurt.
Breakfasts/Brunches: Scrambled egg and toast or fried potatoes; ham & split pea soup with biscuits(on a day when I want more of a lunch than a breakfast), yogurt with cereal and fruit preserves,
Dinners: Ham & split pea soup (on a day when I don't have it for brunch), patties with ground beef filling and salad, smoked sausage stir-fry with vegetables and rice, leftovers. Or...I might have something quite different! It'll depend on how much I feel like cooking, or not!

Oh that all sounds so good! My grandson Steven and I made split pea soup with ham today. :)

Ham and split pea soup is one of my favorites! :) Today, I cooked one of the trays of chicken thighs I bought - I just sauteed it with onions and tomatoes and added the last little bit of teriyaki sauce my daughter had made and kept in the fridge for me. I plan to freeze most of it.
DeleteIt all looks very good! What are the patties with ground beef filling? The mix with dhal curry? That sounds like something I'd really like!
ReplyDeleteThank you, Celie. Yes, the ground beef mixture with all those vegetables that I made and froze, earlier, with the last bit of the dhal curry mixed in! It now has more vegetables and lentils than ground beef! But, that's OK; I plan to make some pastry and use the mixture as a filling and bake them - probably tomorrow as it is supposed to be cold and rainy. Having the oven on will help to warm up the house! :D
DeleteI did write a list of all the suppers we have been having regularly so that I can consult it for inspiration. I now have a calendar in a kitchen drawer and I write down what we had for breakfast, lunch and supper each day. Today I got adventurous. I had wanted to try out a recipe for falafel which could be baked in the oven. But there was another recipe with more spices, so I combined both recipes to make my own. Now I need to type it up and print it for future use. I made large flat patties so we could have them in buns. One each was plenty. Now I have the rest in the freezer, separated with wax paper. I have no idea if they freeze well and then microwave. We shall see.
ReplyDeleteI like the idea of listing all the suppers one has on a regular basis. I think "chicken curry" will feature quite prominently on my list! LOL. Keeping track of meals eaten is helpful, isn't it?
DeleteOh, I like the way you combined two recipes to make your own! I'm sure they will freeze well. Cooked chick peas/garbanzo beans freeze well, so I don't see why falafel wouldn't.

I see another reader asked about your plans for patties with ground beef mixture. I was curious too and now I see what it is.
I hadn't made the chickpea stew that we like in a while so I made that a few days ago. We will finish that up tonight. I'm not sure what we will have this weekend.
Thank you, Debra. I already changed the meal plan a bit, because I cooked those trays of chicken thighs I bought and kept a couple of the cooked pieces for use this week, instead of freezing it all. So, I'm having chicken with the stir fry instead of smoked sausage.
DeleteYes, I added the leftover dhal to the leftover ground beef mixture (which already had quite a few vegetables added to it) and used that as a filling for the little pastries I made. They turned out really well.
You've reminded me that I haven't made chickpeas in a while, myself. I'm sure whatever you decide to make this weekend will be delicious. Maybe your version of cassoulet? Have you seen Julia Child's version of it? I've been watching some of her videos online, recently. Did you know that she met her husband in Sri Lanka? :)
