August Meal Plans: Week 2 Review and Week 3 Plan

Happiness is...finding that there is another piece of pizza in the freezer!  LOL!  I thought I had another piece in the freezer, but, couldn't find it when I was looking for it, earlier, so, I thought I must have eaten it and forgotten to make a note of it.  Then, today, I found it and had it for my brunch!  LOL.  

Here's what the August Week 2 meal plan was:  

Brunches: Salads ✔, sandwiches ✔, and fruit ✔; I might alternate between corned beef sandwiches and tuna salad sandwiches

Dinners:
- Rice with chicken curry, beetroot, chutney, etc.✔
- Shirataki noodles, stir fried with vegetables and sausage
- Burritos from the freezer ✔
- Spaghetti with pasta sauce (from the freezer) ✔
- Leftovers ✔

Here's how it turned out:
Monday:
Brunch: Salad 
Dinner: Didn't write it down, but, chicken curry and rice, probably

Tuesday:
Brunch: Salad and ice cream cone 
Dinner: Again, didn't write it down, but, I obviously ate something!

Wednesday
Brunch: Salad and corned beef sandwich (eaten around tea time) 
Dinner: Chicken curry and tortilla; pancakes and peach sauce for a late night snack

Thursday:
Brunch: Leftover pancakes and chicken curry
Dinner: Spaghetti and ground turkey pasta sauce (from the freezer)

Friday:
Brunch: Fresh fruit salad; corned beef sandwich around tea time
Dinner: Leftover spaghetti and sauce

Saturday:
Brunch: Leftover spaghetti and sauce; leftover fruit salad
Tea: Corned beef sandwich
Dinner: Scrambled egg and toast

Sunday:
Brunch: Burrito (from the freezer)
Dinner: Rice, shrimp curry (from the freezer), zucchini

In between meals, I ate some healthy snacks (fresh fruit, almonds, apple slices with peanut butter) and not so healthy snacks (chocolate wafers, ice cream, faluda, crackers with peanut butter and jam, etc.)

I didn't make the shirataki noodles, but, I followed the rest of the meal plan options and I'm happy with that.

On to August Week 3 Meal Plan!

Brunches: The last slice of frozen pizza (Monday), salads, fruits, chicken curry and tortillas

Dinners: 
Chicken curry, rice, dhal, chutney (Monday)
Shirataki noodles stir fry with sausages
Breakfast for dinner - French toast
Leftovers 

I cooked a fresh pot of rice, on Sunday night, and there's enough leftover rice for at least a couple of meals.  I thawed a package of frozen chicken curry and cooked a pot of dhal on Monday night, and that takes care of meals for at least the next two nights!

  1. I'm working from a meal plan this week, as where I am staying at the moment, shops are few and far between. We're even having Bless's mackerel curry this evening :)

    1. Jules, it sounds like you are well prepared for being in a place without easy access to the shops. Oh, I can highly recommend Bless' mackerel curry! LOL! It's what my daughter decided to make as part of her meal prep, this week! :D

  2. I'm in the middle of planning. It's time for me to do some more batch cooking and I'm looking for some new-to-me recipes to try out.

    I love your definition of happiness. Maybe you should hide some more slices of pizza in the freezer 😊

    1. I hope you find some new recipes, Eileen - maybe search online? I think I did a mini batch cooking that last time I made chicken curry with a whole tray of chicken thighs (about 10 pieces) and froze them in packages of two thighs per package - I've been pulling out a package, each week, and enjoying chicken curry without having to cook! I might do that again, next time I buy chicken. :)
      Ha, ha, it's hard to hide things from myself, but, yes, I will be buying another pizza and stashing some of it in the freezer, later. :)

  3. And happiness is also finding an ice cream bar in the freezer when I thought they were all gone like I did yesterday. :)

  4. With your fresh pot of rice, lentils and curry you are all set for several meals. I like having things like that ready to go in the refrigerator cooked ahead of time.
    I have a lot of cherry tomatoes from my own plants and some from a friend so I'm thinking about making a simple pasta with them for tonight.

    The tree trimmers are here this morning to do the work I have been trying to get done since last fall. The guy we had originally had here to give us a quote never did the job (although he did touch base with us - he just never came lol)
    So I have a new guy who was responsive and his price is reasonable and he's here which is most important, right?
    I am very excited to get this work done before headed into fall. Especially the branches hanging over my house.

    1. Yes, the rice, lentils, and curry will be enough for a couple of additional meals and then, I'll be ready for something else. :) I don't have to have something different each day.
      Oh, fresh pasta sauce from your cherry tomatoes and the ones from your friend sounds lovely. My tomato plants are a bust, this year! I'm glad I had such an abundance of tomatoes, last year - I still have one packet of them in the freezer!
      Yay! You have a new person who actually showed up to trim your trees! I'd hold onto his information for when you next need some work done! Glad you are getting the tree trimming done before winter storms hit! I think my eucalyptus will be OK until next year.

  6. I wish I'd find a slice of pizza in my freezer! Your menu looks good. I need to get back to planning now. I just returned from visiting my oldest sister. Classes start in a few weeks so it's time to get back to work for me! I hope you are not getting over-heated there. Its too hot there!

      Thank you, Celie. I hope you had a good visit with your oldest sister and the rest of the summer will be relaxed before classes resume. You'll be busy when you start working, again. Hope you are able to get your planning work all done for a smooth transition to working. It was warm today; I think we went up to 98F. But, tomorrow's high is supposed to be only 93! We might even go down to 89F by the end of the week!
