Productive Monday

I had a productive day, today.  Seems like I'm productive on Mondays and then, it's all downhill from there until the end of the week!

But I accomplished most of my to do list, today.  Went to the clinic, first thing in the morning, then, went to the office.  During my lunch break, I went to the post office to mail two bill payments and went to the pharmacy to pick up some medications.

On the way home, I stopped by the library to return a book that was due today and 2 others that were due later this week.  Well, I couldn't go to the library and not borrow more books, could I?  Of course, not.  I borrowed several books on gardening and landscaping; I'm looking for ideas for the front garden.

After I came home,  I emptied the waste baskets and took the trash cans to the curb.  But I didn't do much else.  I did spend the evening video chatting with daughter.  :) 

As for my meal planning for the week, I already made some changes, today!  Instead of cooking the Polish sausage with leeks, I had the leftover chicken from my lunch with a version of Spanish rice (daughter had given me a jar of salsa she had bought and didn't like as it wasn't as spicy as she thought it would be; I added about half a cup of the salsa to the rice I was cooking and it made a pretty good Spanish rice).

Today's gratitude list:

- Antibiotics
- Libraries
- A purring kitty cat snuggled next to me

  1. Wow- I never thought of adding salsa to some rice to make a Spanish rice- that sounds good (and super-easy too!)
    I like your gratitude lists :)
    I find that Monday is the busiest day of the week for me- I always feel like I am playing 'catch-up' on things I didn't get done over the weekend. It seems like the rest of the week is a little less busy- but maybe that's just the way it seems to me.

    1. Dawn, the salsa Spanish rice might not be authentic, but it's my version of convenience food!
