Weekend Review

Saturday dawned sunny and warm.  I opened the windows to air the house and, on a whim, tried the heater, again, and it came on!  Yay!  At least the pilot light hadn't gone off!  That was a big relief for me to know that, because I was worried if the pilot light had gone off, then, that meant that the gas might be leaking!  I didn't smell any gas, but I'm glad to know that the pilot light was still burning.  So that meant, it was the thermostat that wasn't working properly - it doesn't always register that I've turned it on.

One side faces the living room, the other side faces the hallway which leads to the kitchen and bedrooms.  There is no fan to circulate the warm air - the heat diffuses and spreads throughout the house.  The warmest spot is directly in front of the heater, the coldest spots are the family room and the bed rooms. 

So, early Saturday afternoon, I went to the nearby home improvement store (Home Depot) and bought a replacement thermostat.  Then, I wandered around their garden center and eventually bought two pink flowered zonal geranium plants for the front garden.  For now, I placed them in terra cotta pots that I already had and placed on the steps leading to the front door. 

After that, I did the grocery shopping that I posted about, earlier.

All the shopping tired me out a bit.  After I came home, I ate a late lunch (bread and meatball curry) and rested on the sofa for about an hour or so.  I wanted to take a nap, but I didn't allow myself to do so, although I might have dozed a bit.

I had a cup of tea after that and then, took down the Halloween decorations.  I decided to wait on the Thanksgiving decorations until closer to the day. 

Then, I started to cook the chicken chili.

Later that evening, my aunt and cousin came to dinner.  After they left, I video chatted with daughter and changed the clocks before going to bed.  I was able to get the heater to come on again, in the night, so I was happy. 

Sunday, my daughter's phone call woke me up.  She was going to volunteer at a fund raising event and was waiting for her colleague who was giving her a ride there and back. 

After her phone call, I got up and had a cup of coffee, replied to blog comments, read blogs and commented on them, etc.  Sometimes, I read blogs during my lunch breaks at the office, during the week, but, usually, don't post comments from the office and I don't always have time to post comments during the evening, either.  At least, if I take the time to comment, then, I might not get anything else done!  So, often, even if I keep up with the reading, I get behind in my commenting.

My neighbor T called me in the afternoon and we chatted for a bit.  Last time I visited her, she showed me a figurine of an angel which her dog had knocked off the table and she was so upset about it, I told her I will buy some super glue and glue it for her.  But I haven't had time to buy the glue.  When she called me today, she said she bought a tube of crazy glue, so I went over in the evening and glued the figurine for her.  She asked me if I needed to rush back or if I had time to sit and visit awhile, so, of course, I sat and chatted with her for about half an hour.

After I came home, I started to cook the rest of the chicken breast strips - I made a sort of teriyaki chicken.  First, I marinated the chicken strips in a little teriyaki sauce (about 1/4 cup):

Then, sauted the marinated chicken strips in a little sesame seed oil  and vegetable oil mixture and added some freshly grated ginger and a couple of cloves of garlic (also grated):

I added a little (about 1 teaspoon) of honey to the chicken mixture and cooked for about 15 minutes.  Then, added a little cornstarch to thicken the sauce.

I wanted to sprinkle a little sesame seeds on top, but the jar of sesame seeds I had in the cabinet had turned rancid!  So, I tossed the sesame seeds!  Next time, I will store the seeds in the freezer!

In the meantime, I cooked some rice and sliced some cucumber:

Dessert was yogurt with brown sugar.

Breakfast had been a banana.  Lunch had been a cold cuts sandwich.  I also had an apple for a snack.

There were 9 chicken strips; I ate one for dinner and kept 2 in the fridge.  I froze the rest in two packages with 3 pieces each.  Just enough for a meal for daughter and me or for a couple of meals for me.  

My aunt and cousin who visited me yesterday, called me today, too, to check on me; aunt in the morning and cousin in the evening.  They both said I had looked tired, yesterday, and they were concerned.  I also spoke on the phone with a friend (she called me on Saturday evening when aunt and cousin were visiting, so I told her I'll call her back, but it was too late to call her last night, so I called her today, instead).  Later, I video chatted with daughter.  She was tired after her day of volunteering at the fund raiser.

I cooked the pork trimmings, too - or, at least, started the process:

I put the pieces in lightly salted water with about half an onion sliced, 3 cloves of garlic, and a few pepper corns.  Then, I covered it and boiled it for a good hour and a half, until the meat was very soft and the fat had rendered out.  Then, I put it in the fridge!  Tomorrow, I will decide exactly what I want to do with it!  Some sort of braised pork, maybe, or a stew, or broiled with a glaze.  I'll probably freeze half for later.  It's not meal planning, exactly, but knowing I have options in the freezer is a good thing. 

This weekend, I was grateful for:
- The pilot light in the heater hasn't gone out
- The heater works (sometimes)
- Aunt and cousin visiting
- Friends calling
- Being able to help my neighbor by gluing her figurine together

Chicken Chili

When my aunt and cousin visited me last weekend, aunt brought me a can of diced tomato (no salt added) and a can of red kidney beans (50% less salt, according to the label) from her/cousin's pantry (I don't think cousin even knew about it), saying maybe I could find a use for them.  As soon as I saw them, I thought, "Chili"!  But I didn't have any ground beef, so I kept them until I could buy some ground beef.

Then, this week, when aunt called to say they were planning to visit me again this weekend, but don't make any dinner, I thought I will make the chili, but use ground chicken or ground turkey instead of ground beef (because aunt and cousin don't eat beef and I wasn't sure if they eat pork).  The store I went to, yesterday, didn't have ground chicken, but they did have ground turkey for $3/lb.  Well, the chicken breast strips were $1.99/lb. and I thought that was a better bargain, so I bought the chicken, instead. 

Later in the evening, I made the chili.  I didn't follow a recipe, as such, but this is what I used:

1 stalk celery, finely diced
1/2 large yellow onion (finely chopped)
1/2 large serrano chili (deseeded and minced; aunt can't eat spicy food, anymore)
approx. 1 lb. chicken breast strips, cut into small pieces/cubed and coated with some of the curry powder
1 can diced tomatoes (undrained)
1 can red kidney beans (drained) 
1/2 can corn kernels (drained)
1-2 tsp. dark roasted curry powder (in lieu of ground cumin, etc.; put half to coat the cubed chicken, the remainder to the pan of chili as it cooked)
1 tsp (approx.) ground cinnamon
1/2 tsp. approx. chili powder
1/2 tsp. approx. paprika
oil (a couple of table spoons) for sauteing
1 1/2 cups (approx) water
1-2 tsp. of chicken bouillon powder
salt (to taste)

I diced the celery fairly finely because, while I like the flavor it adds to a dish, I don't like to eat celery.  One can cut bigger pieces of celery to add to the chili if one prefers.

Again, I like the flavor onions give to a dish, but I don't like biting into pieces of onion!  So, I cut it fairly small.  I deseeded the green chili and added only half of it, because my aunt can't eat spicy food.  

I didn't add any garlic, because I didn't think of it!  But, I suppose one could add a clove or two of garlic, as well.

What I usually do when I need only about half an onion for a dish is, slice the rest of the onion (after all, the cutting board and knife are already out) and portion it into one or two snack sized baggies and freeze.  Then, later, when I want to cook a meal and I don't have fresh onions, or I am in a bit of a hurry, all I need to do is take out one of the bags of onions and add to whatever dish I am making.  They can be added in the frozen state, as they are; I've even chopped them up while still frozen (or thaw a bit and then chop).

I sauted the cut up chicken, celery, green chili, and onions in a large frying pan in the oil, then, added the diced tomatoes, canned kidney beans, and the spices and cooked it.  Halfway through, I added the water and chicken bouillon, because the chili mixture looked too thick to me.  Then, it looked too thin, so I fished out some of the pieces of tomato (which hadn't broken down as much as I had expected) and mashed them up a bit with the potato masher and added them back (next time, if there is a next time, I'll know to crush half the can of diced tomatoes before I add them - or buy a can of crushed tomatoes; I also took out a fresh whole tomato if the can of tomatoes wasn't enough, but I didn't need the fresh tomato).  Finally, I added half a can of corn, because I thought it would add a little color and I like corn (plus, I didn't have frozen corn and I needed to use up the canned corn).

I didn't add any bell peppers because 1) I didn't have any, 2) I didn't think to buy any 3) they make me burp!  But, I think some bell peppers will be good, too.  

Aunt still found the dish to be a bit too spicy, so if I make this dish again for her, I will not add any green chili or chili powder until the dish is cooked and I take out a portion for her.  Cousin and I didn't think it was too spicy, but I could taste a bit of the heat from the green chili and the chili powder, so I'd say to adjust the spices to your taste or omit it, altogether. 

I don't know if anyone adds carrots to chili, but that might be a possibility and will add a little sweetness to counter the heat.

Initially, I cooked it on high heat (when sauteing) and brought it to a boil after the other ingredients were added; then, I lowered the heat and let it simmer for about 30 minutes.  I think the total cooking time was about 40 minutes.

I didn't know how much this made, but it made a fairly large frying pan full.  I sent some of the leftovers home with aunt and cousin and kept what you see above for myself.  I'd say we were able to get 6 servings from it (small bowls); maybe 4 average servings?  I didn't sprinkle any cheese over the individual servings.  I served it with slices of French bread, but corn bread would have been good, too.

I tried to figure out the costs, but I couldn't do a good job because I used mostly what I had on hand or was given; the only thing I bought especially for the dish was the chicken.

1 can tomato & 1 can beans (gift from aunt and cousin) but perhaps $1 per can?  So, $2 if I had to buy them.
1/2 can of corn, purchased on sale at $.50/can, so $.25
I'm assuming less than $1 for all the rest of the ingredients - oil, spices, chicken bouillon, etc.
Celery was purchased for $.34 for the entire head, and there are more than 10 stalks in the head, so 1 stalk would be less than $.03.
Onions were purchased at $.20/lb, approx. 3 onions/lb, so each onion was a little more than $.06 each and half an onion would be $.03?
Serrano chilies were purchased at $.79/lb. and I generally buy 4-5 chilies for a few cents and freeze them to use as needed.  

So, approximately $5.25 to make this dish, including the cost of the cans of tomato and beans.  $3.25 if I don't include them, because they were given to me.  I could have used less chicken, if I wanted to cut down the cost even more, but I liked the amount I did use.  So, I'd say this was a fairly frugal dish to make. 

By the way, I do have a slow cooker, and I suppose the chili could have been cooked in it - I did think about it.  But, my slow cooker is an old one (a gift from one of my cousins for Christmas 1978 and avocado green!  ) and doesn't have a liner that can be taken out for easy washing, so I tend not to use it, except to keep something warm during office pot lucks or the almsgiving, etc.  It will get more use if it was easier to wash!  I should probably give it away and get a new one with a removable liner (but the frugalite in me protests against that waste of money!).  Maybe I'll try cooking the pork rib trimming in the slow cooker.

November Grocery Shopping - Week 1

I went grocery shopping on Saturday (November 4) and bought:
 
1 loaf French bread = $.99
5 6-oz. containers of flavored yogurt @$.50 = $2.50
1 gal. milk = $2.79
1 7-oz. container cold cuts = $3.00
3 bananas @$.49/lb = $.55
1 packet boneless/skinless chicken breast tenderloins, @$1.99/lb. = $4.22
1 packet pork ribs trimmings, @$1.29/lb. = $4.70
 
My total for groceries only came to $18.75

November's grocery budget is going to be the usual $75, plus I have $5.66 extra, being carried over from the October budget (not counting what was leftover from the prayer gathering budget).  I am not hosting Thanksgiving, so I don't have to budget for it.  Daughter will be visiting twice in November, for almost 12 days, total, so the $80 is for both of us. 
 
November grocery budget:  $75 + $5.66 = $80.66
November grocery spending to date: $18.75
Amount left in November grocery budget = $80.66 - $18.75 = $61.91
 
I still have quite a bit of food leftover from when I bought groceries for the prayer gathering.  They will be incorporated into November's meals (or sent home with my daughter when she visits).  
 
I don't normally buy boneless/skinless chicken breast tenderloins, but I wanted some chicken to cut up into small pieces to make a type of chili and I thought these chicken breast strips would be good for that and easy, too.  I bought the smallest package I could find and it weighed just over 2 lbs.  I took out approximately half the chicken for the chili dish I made for dinner.  The rest will be cooked tomorrow, once I decide what to make!  A stir-fry, maybe.

The pork spareribs trimmings is something new to me, which I bought to try.  I guess these are the bits they cut off in order to get the uniform looking ribs that are sold for $2.99/lb. at this store.  I don't mind that they are trimmings.  I will think of them as mini-spareribs!  Not sure how I will prepare them, but I'll think of something.

Friday: Hot Drinks, Blankets, and Pomegranates

This whole week has been overcast and cloudy, with some rain at times.  64F in the morning with afternoon highs of 74F might sound perfect to some, but I prefer temperatures in the 80s and 90s.  The temperature inside my house is 62F this evening.

I need to get my heater checked, as it is not coming on when I try to turn it on.  I have a feeling the pilot light might have gone off.  So, until I get it checked, I am bundling up in sweaters, with a hot drink:

Knitted Blanket

The blanket is one that I knitted when I was pregnant with my daughter.  It was meant to be a baby blanket, but my mother urged to make it bigger and it is almost big enough for a bed!  It is a perfect size to be used as a throw when curling up on the sofa.  

I went to the office, today, and took some cornbread I had baked (when the heater is not working, turn on the oven and bake!)  I am not sure if I mentioned it, but one of my colleagues covered the vent over my desk at the office with a plastic trash bag taped over it!  Now I am not having the vent blowing on me, directly, and it feels warmer.


I picked the last two pomegranates, this evening.  They were starting to crack, after the rain the other day.

I spent a fairly relaxed evening after I came home, catching up on blogs.  One of my aunts called to check on me and to say she and cousin might visit tomorrow night, if it isn't raining, but I am not to cook any dinner.  Well, I'll still cook something because I need to eat, too.  One of my friends called, too, and we had a nice chat.  Later, I video chatted with my daughter.  What I didn't do was the last bit of paperwork!

On Friday, I was grateful for:
- It is warmer in the office
- Hot drinks
- Warm blankets
- Phone calls from family and friends
- A productive day at the office/relaxed evening at home

I am looking forward to the weekend.  I hope to have a nice balance between things I need to do and things I want to do.

November Balanced Life Goals

Time for my November goals for a more balanced life.  The main goal is to achieve a better sense of balance in my life by attending to each of the areas I've identified as being important to me, so that none are neglected.  The goals are not listed in any particular order.  When I first started doing these balanced life goals, I began with a circle, divided into spokes.  Each spoke represented one area of importance.  The circle is like a wheel - if all the spokes are equally plumped, then, the wheel rolls along smoothly; if one or some of the spokes are less plumped or downright deflated, then, the wheel doesn't roll as smoothly and it will be a bumpy ride. 





These, then, are my November goals:


Spiritual:  The goal is to live a spiritually meaningful life.
- Continue with daily prayers and gratitude, especially during this month of Thanksgiving -
- Continue to focus on blessings, joy, and abundance -
- Take time for meditation -
- Cultivate non-attachment - 
- Attend the monthly prayer gathering (being held at my late friend's home, by her daughter, to commemorate the 1st anniversary of her death) -
- Call the monks at the temple to reserve a date in December for the almsgivings-

Environment:  The goal is a clean, tidy, uncluttered house and a well-maintained garden.
House:
- Continue to tidy and clean the house - maintain the rooms already done and concentrate on the bedrooms.
Garden:
- Attend to the eucalyptus tree - get an arborist's opinion; trim or cut down the tree- 
- Plant some new plants in the front garden for a little fall color -
Daughter:  The goal is to continue to have a close relationship with her. 
- Daily texts, phone calls, emails , and video chatting -
- Enjoy her next trip home (2 visits planned for November!) -

Family & Friends:  The goal is to keep in touch with various family members and friends.
- A visit from aunt and cousin.
- Phone calls from family and friends
- Video chatting with a friend
- Will be seeing several members of the family and friends at the monthly prayer gathering
- Celebrate Thanksgiving with family and friends
- Maybe go out to lunch with sister
 
Career:  The goal is to continue to do work which I enjoy (for the most part) and which enables me to support myself.
- Continue to do my assignments on time -
- Work from the office each work day this month -

Finances:  The goal is financial security.
- Continue budgeting and spending mindfully, with purpose - Might buy two more appliances this month (washer and dryer); it has been budgeted for and money set aside.
- Meet with financial planner

Health & Well Being:  The goal is good health.  This will continue to be the focus, this month, as well.
- Attend the appointments with my various medical doctors - 2 scheduled in November.
- Continue to go for additional screening tests, as needed - One scheduled
- Continue to monitor blood pressure, sugar levels, and weight -
- Continue to focus on a healthier diet (more vegetables!), drinking enough water, exercising regularly, and getting sufficient sleep -

Time Management:  The goal is having enough time to do all what I want to do!
- Organize myself so that the important things get accomplished on time -

Leisure/Crafts/Hobbies/Me-Time:  The goal is to relax doing something I enjoy doing for the pleasure of it.
- Finish the two quilts in progress - 
- Do a few more things on the Fall Joy List -

October Balanced Life Goals - Month End Review

October is over and it is time to review my balanced life goals for the month. As I have mentioned earlier, the goal is to achieve a better sense of balance in my life, to attend to each of the areas I've identified as being important to me, so that none are neglected.


Spiritual:  The goal is to live a spiritually meaningful life.

- Continue with daily prayers and gratitude - On going; daily prayers are part of my routine and I have had many things for which to be grateful, in October.
- Continue to focus on blessings, joy, and abundance - On going
- Take time for meditation - Have been trying
- Cultivate non-attachment - Have been trying; still too many things I'm holding on to for sentimental reasons
- Host the monthly prayer gathering- Hosted the October prayer gathering and I think it turned out quite well; very grateful for all the help my cousins and friends gave me to make it a successful gathering.
- Participate in the special ceremony at the temple (scheduled on the Friday evening prior to and the morning of the same day as the monthly prayer gathering!) - Participated in the Saturday morning's ceremony, although I didn't stay for the entire event.

Environment:  The goal is a clean, tidy, uncluttered house and a well-maintained garden.
House:
- Clean the house for the prayer gathering - Got the main rooms of the house tidied and cleaned.  Started on my bedroom; will continue in November, too.
Garden:
- Attend to the eucalyptus tree - get an arborist's opinion; trim or cut down the tree- not done!
- Plant some new plants in the front garden for a little fall color - not done, as it was too hot during most of October. 


Daughter:  The goal is to continue to have a close relationship with her. 

- Daily texts, phone calls, emails , and video chatting! - Have been chatting with her every day.
- Look forward to her next trip home (in November) - Have been looking forward to it.

Family & Friends:  The goal is to keep in touch with various family members and friends.
- Visit my mother's grave on her birthday - Visited her grave
- Communicate regularly - phone calls, texts, and emails; I will see several of them at the prayer gathering - Spoke with various family members and friends on the phone, cousins and a good friend helped with the prayer gathering preparations and clean up, visited my neighbor and had coffee with her one evening, had aunt and cousin over to dinner last weekend, exchanged emails with several friends, etc.
 
Career:  The goal is to continue to do work which I enjoy (for the most part) and which enables me to support myself.
- Continue to do my assignments on time - Did so
- Work from the office each work day this month - Worked mostly from office, but worked from home a few days, as well.

Finances:  The goal is financial security.
- Continue budgeting and spending mindfully, with purpose - Did so; I came under my grocery and prayer gathering budgets; I questioned a double billing and got that straightened out, I called about a medical billing and hopefully, got that taken care of, too.

Health & Well Being:  The goal is good health.  This will continue to be the focus, this month, as well.
- Attend the appointments with my various medical doctors and dentists - 2 scheduled, so far, in October: the dentist (for the crown replacement) and primary care physician assistant (routine follow-up); there might be a third appointment, as well, depending on how the dental work proceeds - Did so; there was an appointment with the surgeon, as well.
- Continue to go for additional screening tests, as needed - No additional tests were needed.
- Continue to monitor blood pressure, sugar levels, and weight - Did so
- Continue to focus on a healthier diet (more vegetables!), drinking enough water, exercising regularly, and getting sufficient sleep - Work in progress!

In addition, I made my selections for health care insurance for next year.  I kept the same medical, but changed the dental.

Time Management:  The goal is having enough time to do all what I want to do!
- Organize myself so that the important things get accomplished on time - Another work in progress, although the important things are getting done.

Leisure/Crafts/Hobbies/Me-Time:  The goal is to relax doing something I enjoy doing for the pleasure of it.

- Finish the two quilts in progress - I made progress but didn't quite finish it
- Do a few things on the Fall Joy List - I did a few things on my list: 
#3. Decorate my house for fall (in October)
#6. Host the October prayer gathering
 

So those were my goals for October.  I didn't achieve all my goals but I made good progress on most of them and I am content.  Did you make any monthly goals for October?  If so, how did you do?  Are you happy with what you were able to achieve?

On the Last Day of October

Fall continues!  It even rained early this morning!  And there's more rain in the forecast through the weekend!  This is so exciting!  Rain is such a blessing for us.

I  worked from home, today.  During my lunch break, I went to the dentist's to pick up the document they had prepared for me.  Then, I stopped at the dollar store (in the same mini mall as the dental clinic) to buy two boxes of quart sized freezer bags and, since they had a door mat that I liked for $1.50, I bought that, too, for the inside of the front door (will put it out for the almsgiving; the current door mat will do for the time being, but it is looking a bit worse for wear after being used for at least the past 3 years). 

I had been dithering over which dental plan to choose before our open enrollment period ended.  The plan I am on currently (a Dental HMO), has low monthly premiums, but, of course, doesn't cover a lot of treatments or minimally covers them.  The PPO coverage includes better benefits, but costs 5 times as much!  I was weighing the pros and cons over and over again, but, eventually made the decision to go with the PPO.  It goes into effect next year.  Once the decision was made, it was a matter of calling and making the change.

I continued with my paperwork after I finished my office work for the day.  I spent more than the 30 minutes I had planned to do and went through another big bag of papers and tossed what could be tossed (another grocery bag full) and filed the rest.  The filing wasn't done to my usual standards (by date, with most recent in front, etc.), but for now, just getting the papers in the appropriate folder is sufficient.  I told myself that in this instance, it doesn't have to be perfect; "good enough" is OK.  I will go through and redo the files, later, when I next file something in them.  Or, at the end of the year, when I have to make new file folders for the new year.

I watched some TV while I worked on the papers and files.  We didn't get any trick or treaters down our road, today.  It didn't even feel like Halloween. 

Today, I am grateful for:
- Rain!

- Being able to work from home
- Being able to make a decision on the dental insurance
- Having a choice of insurance in the first place

Tuesday's To Do List:
- Go to the dentist's to pick up a document - DONE
- Make a decision about choice of dental insurance - DONE
- Go to the office - Worked from home
- Make an additional phone call about another medical bill - POSTPONED
- Bring the trash cans in - DONE
- Water the indoor plants - DONE
- 30 minutes of paperwork - DONE  (Spent a lot more than 30 minutes on it!)

Wednesday's To Do List:
- Go to the office
- Make the phone call about the medical bill
- 30 minutes (or more) of paperwork
- Wash dishes
- Do the litter box
