Thursday's Blessings

Peach Pie Fresh Out of the Oven

Thursday was full of blessings!  It was a blessing to have another pain-free day (although I spent it in bed and didn't walk or do anything that might cause a flare up).  .

My friend R visited me in the afternoon and it was a blessing to spend a few hours in her company while my daughter was busy with work.  It was lovely to see her again and to have someone to talk with, in person.  She also cut up a bunch of peaches so that my daughter could freeze them and that was another blessing!

After work, daughter took over a bag of fresh peaches to neighbor T; she also texted one of her friends and asked if she'd like some fresh peaches and perhaps a zucchini - her friend was thrilled and said she'll stop by over the weekend to collect them.  We also offered some peaches to the parents of another of her friends - we are waiting to hear back from them.

Later in the evening, I asked daughter if she was up to making a peach pie with some of the rest of the peaches (these are still the peaches that were picked from the broken branches!).  She was happy to do so as long as I mixed the dough for the pie crust!  So, while she sat at the family room table and cut up the peaches, I sat up in bed and cut the butter into the flour:

Daughter took over from there, rolled out the pie crust and added the filling.  She had asked me if it was necessary to peel the peaches and I really didn't think it was necessary (these peaches have a very thin peel and haven't been sprayed; why waste all that natural fiber, etc.?)  So she left the peel on.

The pie filling: fresh peaches, lemon juice, 2/3 cup sugar (reduced from 1 cup called for in the recipe), a bit of flour, cinnamon, nutmeg:

Then, she added the top crust, brushed it with a beaten egg:

The pie went into a pre-heated 450F oven for 10 minutes, then, the oven temperature was reduced to 350F and the pie baked for another 30 minutes.  Half way through, daughter covered the edges of the pie crust with strips of foil to prevent over browning.

We both enjoyed a slice of the freshly baked peach pie after dinner!

The crust came out nicely and the filling wasn't overly sweet; it was especially delicious with a scoop of vanilla ice cream!  The peel had cooked down and it wasn't noticeable that it had been left on.  Being able to help my daughter make a pie with peaches from our tree was another blessing!

On Thursday, I was grateful for:
- Another good day
- Friend R's visit
- R cutting up peaches for me
- My laptop didn't break when I dropped it, accidentally!
- Homemade peach pie!

Thursday's joyful activities included visiting with R, helping daughter make a peach pie, and enjoying a slice of the pie! In addition, there were a couple of really lovely emails from friends which added to my joy.  As I said, a day filled with blessings!

Plans for today (Friday) include taking the last dose of the anti-viral medication and M tending to the garden later this afternoon (he calls my daughter Little Miss Baker and I told him about the peach pie; he's looking forward to a slice!)

  1. I've never tried peach pie but it looks and sounds great! I think I might have had a crumble with peach and something else in it, once. Glad you got to help with the dough... more fun than cleaning the toilet for sure!

    1. Ha, ha, yes, helping with the dough was fun, but, you know, cleaning the toilet felt immensely satisfying that day! :D

      Peach crumble sounds good, too. A lot of people here make something called peach cobbler, which usually has only a top crust and which is also very delicious.

  5. I'm so glad you made a peach pie with all those peaches you have. I was hoping you would. When I starting reading you and your daughter were making a peach pie I said to myself "I hope they had it with vanilla ice cream." And sure enough, you did not disappoint. It looked delicious. Also, so glad you had a day full of blessings with minimal pain. I hope it continues. Denise

    1. Thank you, Denise! I didn't make a peach pie, last year, because my daughter wasn't home to enjoy it. But, we made up for it, this year! I was happy to be able to enjoy a piece with vanilla ice cream, yesterday. But, I have to be careful about my sugar intake, so, today, I just had a piece of pie without ice cream. It was still very good!

    Your joyful activity is definitely more fun than the toilet cleaning. How lovely to have a visit from your friend - that must have cheered you up.

      It was lovely to have my friend visit me. It was almost like pre-Covid times! I had only seen her for brief minutes since last year March, usually when I was dropping something off for her or picking up something from her.

      Yes, my joyful activities were more fun than scrubbing the toilet, but, oh, that scrubbing felt so satisfying! Today, I managed to clean the bathroom sink. :)

  8. So pleased you had a visit and that R was able to help your daughter by cutting up the peaches that were to be frozen. The pie looks wonderful. I buy frozen peaches and make a cobbler or crisp sometimes.

    1. Thank you, Bushlady; it restored a bit of normalcy after all the isolation and social distancing. :) It was a big help, too, that R was able to cut up the peaches for freezing. The pie turned out nicely, didn't it? Peach cobbler and crisp sounds good, too.

    I'm so glad your friend R visited. I'm sure you've missed seeing her in person. I know you've seen her when you've done your food exchanges but it's nice to have a normal visit isn't it?

      It was lovely to have an in-person visit with friend R and today, my daughter received a visit from one of her friends, too. A bit of pre-Covid normalcy returning to our lives!
