Ramen Bowls |
Weekly meal planning is sort of taking a back seat, these days.
This week, on Sunday, I cooked a package of smoked sausage links with strips of onions and bell peppers and sauteed some chicken thighs with caramelized onions. For Sunday night's dinner, I placed a smoked sausage link and some of the onions and bell peppers on a tortilla which was then folded over to form a sort of burrito and sauteed to brown it a bit. The leftover smoked sausages are in the fridge for another meal, this week.
Monday night's dinner was ramen bowls, using packaged ramen noodles to which we added toppings - slices of sauteed chicken thighs, shredded cabbage, snap peas, broccoli florets, etc. I cooked the ramen noodles while daughter sliced up the toppings.
Today (Tuesday), daughter made us both salads with lettuce, the last of the mixed salad greens, the last of the sauteed chicken thighs, snap peas, and a cut up pear. I baked brownies from a boxed mix for dessert!
I am thinking of cooking some ground beef for tomorrow night's dinner - I thought spaghetti with meat sauce would be nice, but, my daughter doesn't like tomato based sauces all that much. She has mentioned making a miso meat sauce, so maybe we'll try that, instead. I'll have to remember to take a package of ground beef out to thaw! Better take out more chicken, too, for later in the week!
How is your weekly meal planning coming along?
We have no meal plan other than to have a well stocked pantry and freezer so we have ingredients to work with and that mostly works. :)
ReplyDeleteYes, that works, too! :) We just finished most of the fresh salad greens, however (it lasted 10 days), so, there might be a grocery order being placed in the next day or so for a few items including salad greens.

DeleteI have my new plan all ready to go as soon as I receive the next delivery on March 1st. Until then I am just using up meals from the freezer.

I'm so glad you were able to get a delivery slot and you have enough meals in the freezer to get you through till then! Thank you; the addition of chicken and vegetables to the ramen raises the nutritional value, a bit, doesn't it?

ReplyDeleteI remember buying them frequently when I was a grad student. My mom told me not to use the packet of flavoring, so I used to add sautéed vegetables to noodles. 😊
Ha, ha, I wonder what students ate before ramen noodles became readily available? :D
DeleteI've never had Ramen noodles. I saw someone else online adding different things to them to make them more hearty and now you mentioned doing that.

Your meals sound good.
I go through phases when it comes to ramen noodles, but, usually keep some on hand for emergencies (along with instant cup of noodles). My daughter prefers the ramen bowls at Japanese restaurants (made with fresh or frozen noodles they've made), but, she agrees that the instant ramen noodles are an acceptable substitute. :)

ReplyDeleteAfter completely letting things slide during January, I have begun meal planning again this week and, although it takes a while to decide what to eat and to write my shopping list, it definitely helps me to prepare dinner after a busy day. X
It is helpful to have a meal plan, isn't it? Just knowing what we are going to make for dinner seems to keep the stress levels down. :)
