Meal Planning: April Week 4 Review and May Week 1Plan

Sauteed Apples and Custard

This was my meal plan for April Week 4:

Brunches: Ham and bread rolls, boiled mung beans, tuna salad and crackers, scrambled egg and fried potato, toast and peanut butter, muffins?

Dinners: Ham and potato soup (with added vegetables), baked salmon with rice, carrots, and green peas broccoli and potatoes, chicken curry and rice with dhal and moringa curry, baked breaded shrimp, leftovers. 

Here's how that worked out:

Monday:
Brunch:   Ham and bread roll sandwich
Dinner:  Ham and potato soup

Tuesday:
Brunch:  Tuna salad on crackers
Dinner: Ham and potato soup

Wednesday:
Brunch: Leftover tuna salad on toast
Dinner: Leftover ham and potato soup with toast

Thursday:
Brunch: Ham and bread roll sandwich
Dinner: Baked salmon with rice, carrots, and green peas

Friday:
Brunch: Peanut butter sandwich
Dinner: Baked breaded shrimp with tomato chutney

Saturday:
Brunch: ??? I think I had a ham and bread roll sandwich, but, I didn't write it down and I've forgotten!
Dinner: Leftover baked salmon with rice, carrots, and green peas

Sunday:
Brunch: Scrambled egg with the very last bit of ham, diced and added to it, bread roll
Dinner: The last of the leftover baked salmon with rice, etc.

Snacks and desserts included apples (both fresh and sauteed), kiwi (fresh), custard, peanut butter and crackers, and popcorn.  

There were a few changes, but, it worked out quite well.  I didn't eat the potatoes I planned to eat!  

On to May Week 1:

I'm continuing to plan this week's meals based on what I have on hand; however, I am considering putting in a grocery order, sometime this week.

Brunches: Burritos (Monday), scrambled egg and fried potatoes, milk rice with chicken curry and/or seeni sambol, pancakes and sausages, tuna salad on toast or crackers, leftovers

Dinners: Chicken curry with leftover rice, carrots, green peas (Monday), chicken curry with rice, dhal, and moringa curry, "breakfast for dinner" (either eggs and potato wedges or leftover pancakes and sausages), baked breaded shrimp, leftovers.

Snacks and desserts: Fruit (apples, pomegranate, home canned peaches), crackers and peanut butter, maybe a cake or muffins?   

At least, that's the plan!  No doubt there will be some changes as the week progresses!

  1. I cooked a chicken chasseur in my slocooker(crock pot) We had some Saturday with baked potatoes. On Sunday I took out two portions and made pies (served with carrots and French beans) Yesterday I served it with rice. There are two portions left for today - to go with pasta or mashed potatoes. Feeling very thrifty!

  2. I like the sound of sauteed apples and custard, that's my sweet tooth :) I cooked a chicken on Sunday and have had two meals from it already and still plenty left for Tilly, she does like chicken and all cooked meats and fish too.

    1. Thank you, Eileen. The sauteed apples are a quick dessert and less trouble than an apple pie!
      You, too, did well with the chicken (see Angela's comment, above). :)

  3. I never thought of sauteeing apples and now I feel like I have to try that! Thank you for sharing. I love seeing your meal plans.

    1. I love sauteed apples - sometimes, I don't even bother to peel them, but, this time, I did. Heat up a little butter, add the sliced apples, let them saute till soft, add a bit of sugar if you like and a sprinkle of cinnamon and you have a lovely dessert. I like to eat it while still warm with ice cream, but, I didn't have ice cream, so I made some custard!

  4. I've been on my own this last fortnight, so my meals have been simpler & more repetitious than when Mr FD is here. I've also bought a few ready meals and quick cook things. I may continue to go a bit simpler in future although he doesn't like repeated meals. Love FD xx

    1. Cooking for one can be a bit challenging as we often make too much and then, there are leftovers! Sometimes, we can freeze the leftovers, other times, eating the leftovers is easier than cooking daily!

  5. The only thing that's on our meal plan so far is spaghetti tonight. But we need a plan because we ate out more than I liked last week.

    1. Spaghetti sounds good to me! Nothing wrong with eating out, either! But, eating out can become expensive. Having a flexible meal plan (or just having a vague idea of what to make) is ideal.

  6. I'm glad I'm not the only one who forgets what they have eaten if they don't write it down, lol. I have some ground beef to deal with today. I shall brown it with some onion and then put half in the freezer as a basis for a future meal (spaghetti sauce, pie?). The rest will be made into a cottage pie with the addition of some savoury stuff and mashed potato topping.

    1. Yes, unless I write it down, I forget what I ate! LOL. Browning the ground beef and freezing half sounds good - I do that, often, myself. Yum! Cottage pie! That sounds delicious!
