Banana-Walnut Muffins |
On Saturday, July 8, we broke the record for the lowest temperature recorded on this date! Last night's low was 58F, this morning, it was 61F around 10:00 a.m., although, eventually it warmed up to 79F in the afternoon. The average temperature for this date is 88F. The record high for this date was 110F in 2017.
I spent a relaxed morning checking on the plants in the garden and picked a ripe tomato and a few ripe blueberries. Later, I tidied up the family room and put away a few files.
I took a short nap in the afternoon, then, chatted with former neighbor T and with friend R. Later, I baked a batch of banana-walnut muffins with one of the overripe bananas. I had two of the muffins with my tea in the evening (brunch had been tuna salad on toast, dinner was coconut roti with leftover chicken curry and lentil curry).
In the evening, I looked outside and there were two raccoons eating the kibble I had put out for Mama Cat! I tried to take a photo, but, they didn't turn out well. They ate all the kibble and left. I hope they won't eat my tomatoes!
Today, I am grateful for:
- A sunny, warm day
- Garden produce
- Phone chats with neighbors and friends
- Video chats with my daughter
- Afternoon naps
Today's joyful activity was baking muffins and enjoying them warm from the oven!
I've no specific plans for Sunday. I'll probably do some sewing and maybe more baking.

Your banana and walnut muffins look delicious. I expect you weren't happy to see the racoons in your garden. I don't know what's happening with the weather I heard a loud rumble of thunder yesterday but the weather is warm and not too hot, I'm sorry it is chilly for you when it should be hot.

DeleteThe raccoons knocked over some glass jars with plant cuttings I had kept to root, knocked over Mama Cat's water dish, made a bit of noise while they waddled around the patio table and chair and the flowerpots. But, they looked cute, like little bandits with that dark band around their eyes. I haven't checked on the tomatoes, yet, this morning, but, I refilled Mama Cat's water dish, up righted and refilled the glass jars (looks like some of the plant cuttings have rooted; must find a spot to plant them).
The weather seems all over the place, doesn't it? Happily, it is supposed to warm up nicely, later this week. I'm looking forward to that. :)
Aw, poor Yasmine. She brought a lot of joy to many people who visited her and brought her treats; I hope her spirit is enjoying being in a nice green meadow with other spirits to keep her company.
We've been having very hot weather, so you "cold" day says great to me. It's all relative, isn't it?
ReplyDeleteYes, it is all relative, June. It's 72F right now and sunny; our high today is supposed to be 78F. It is supposed to warm up later in the week. I know I shall look forward to it. In the meantime, I should probably get all the housework done today, while it is still relatively cool. :)
DeleteMy goodness those are majestic muffins! The photo would serve well in any cookbook. I have two soft bananas to use up but I can't imagine my muffins will look as good, although I know they will taste fine. You certainly chose the right day to heat up the oven! I hope you were able to keep warm.
ReplyDeleteThank you, Bushlady; you are very kind. I'm sure your muffins will be delicious. I sprinkled a little bit (1/8 of a teaspoon) of turbinado sugar on the top of each muffin before I put it in the oven to bake - it makes a sweet crust and gives it a nice finish, I think. :)

The banana walnut muffins look excellent! Racoons are cute but so destructive. I hope they don't get your tomatoes! I'd love your weather, the temperatures would suit me!
ReplyDeleteThank you, Celie; the muffins turned out well. The tomatoes are safe! I checked and picked 4 ripe ones. There is one tomato lower down that has been eaten, but, I suspect Chicken Little or one of the lizards! I'm leaving that for them and hoping that they will not try to get to the ripening tomatoes higher up! It was a little warmer, today, with a high of 80F. I approve! :D Temperatures are supposed to go up later in the week - maybe I can wear short sleeves again (I had a sweater on, this morning!) and take my socks off! :D

Thank you. Actually, M didn't get to sample these muffins! I shared some with K (neighbor T's daughter) who managed to lock herself out with her keys in the garage and was waiting for the locksmith to show up. She came over to borrow my phone charger.

ReplyDeleteThank you, Jules. You can absolutely leave out the walnuts! I sometimes add cashews to my baked goods instead of walnuts and that's good, too.
