March Meal Plans - The "We Love Leftovers" Edition!

Meal plans?  What meal plans?  The first week's meal plan turned out to be a huge Leftovers Feast!  All that Japanese food we got for daughter's birthday lunch! Which was fine with us!  We love leftovers!   

Monday:
Brunch: Salad with sliced chicken/last leftover dolma half
Dinner
:  Leftover salmon, rice, broccoli, green beans, etc. (daughter); sliced chicken and tortilla "burrito" (me).

Tuesday:
Brunch: Milkrice and seeni katta sambol; I also made a sweet coconut mixture known as "pani pol" (honey coconut) that is made with grated coconut and palm treacle cooked together to eat with the milkrice
Evening Tea Snack:  "Imbul kiribath" or milkrice with pani pol filling
Dinner: Italian sausages with bell peppers and onions, mashed potatoes, broccoli Armenian mixed grains and vegetable salad, compliments of neighbor S

Wednesday:
Brunch: Japanese take out
Dinner: 
Stringhoppers, coconut sambol, chicken curry

Thursday:
Brunch: Leftovers (daughter had leftover grilled squid; I had the last half of leftover stuffed peppers); we both had a piece of leftover birthday cake!
Dinner: 
Assorted leftovers buffet (I had my leftover beef teriyaki and rice from the Japanese restaurant; daughter had leftover sushi rolls)

Friday:
Brunch: Salad Leftovers - daughter had leftover stringhoppers with chicken curry; I had leftover milkrice with chicken curry
Dinner: 
Leftover Italian sausages with carrots, snowpeas, and rice or potatoes
Me: Fusion Cuisine Tortilla: Leftover sauteed chicken with leftover Japanese pickled vegetables and Sriracha hot sauce in a flour tortilla! 
Daughter: Leftover salmon, rice, broccoli, etc.

Saturday:
Brunch: Scrambled eggs and toast Daughter: rice, last piece of salmon, broccoli
Me: Chicken curry and tortilla
Dinner: Leftovers made into fried rice or soup  Japanese style chicken curry, rice

Sunday:
Brunch: Waffles Daughter: Japanese curry and rice; Me: Cheese sandwich
Dinner: 
Spaghetti and meat sauce (using ground turkey instead of ground beef)  Leftovers - Japanese curry, with rice (daughter), without rice (me)

Did I mention we loved leftovers?  LOL!  The important thing is we had some delicious food to enjoy during the week, we didn't go hungry, and nothing was wasted!

Onto Week 2!  Although, I'm not even sure if it is worth the effort!  LOL!

Monday: 
Brunch: Pizza!  I bought a frozen pizza with my grocery order and we shared that for lunch
Tea: Another slice of pizza!
Dinner: Italian sausages sauteed with bell peppers and onions, sauteed garlicky green beans,  rice

Tuesday:
Brunch: Egg salad sandwiches
Dinner: Leftovers!  (Rice, sausages, green beans)

Wednesday:
Brunch: Pancakes
Dinner: Leftovers! (Rice, sausages, green beans) and broccoli

Thursday:
Brunch: Leftovers buffet - last slice of pizza, last bit of egg salad, toast, etc.
Dinner: Curry puffs with ground turkey filling, salad

Friday:
Brunch: Leftover curry puffs
Dinner: Chicken soup and/or fried rice

Saturday:
Brunch: Leftover chicken soup
Dinner: Salmon, rice, asparagus

Sunday:
Brunch: Waffles
Dinner: Leftover salmon, etc.

As always, the meal plan is subject to change, but, I do want to use up as many leftovers as possible!

  1. We are having a leftovers week. We are going away at the weekend so I want to use up the veg in the fridge.

  2. You definitely do love your leftovers and why not indeed. Food waste is one of my pet hates so nothing gets wasted here, I am very keen on checking use by and best before dates too.

    1. We didn't want to waste any of the food we bought from the restaurant for the birthday lunch! I froze some of the items we received from my friend for the birthday dinner, to be enjoyed later. :)
      Food waste is something I dislike very much, although, occasionally, I have some dairy that spoils before we can finish it, sometimes even before the "best by" date. Otherwise, on canned foods, etc., I tend to ignore the best by dates!

  4. Leftover squid for brunch. Now there's a challenge! I haven't had squid in a long while and I am just remembering an iconic Italian meal in San Francisco, decades ago. I had baby squid with black tagliatelle, which had a certain horror quality about it but was delicious, nevertheless!

    1. You have to understand that our "brunch" is usually eaten around 2:00 p.m.! Neither daughter nor I have breakfast in the mornings. She has a cup of coffee when she wakes up and I have a cup of tea. Then, we are not hungry for breakfast, although, sometimes, we will eat a fruit, late morning or around noon. Today, for example, I had half an apple with a spoon of peanut butter around 1:00 p.m. So, our brunch is probably closer to lunch than breakfast, but, I call it brunch because we usually don't have breakfast!
      Oh, I wonder if the tagliatelle was cooked in the squid ink to make it black? I grew up eating squid curry, but, the ink was always removed from the squid before cooking. :)

  5. I like the flexibility in your planning! That's what I'm aiming for and my new plan will include planned leftovers, because sometimes the leftover re-hash is better than the original meal!xx

    1. I like planned leftovers! I have no problem eating the same thing two or three days in a row. By the fourth day, however, I might be a bit tired of it! :)

    1. Thank you, Lyssa; flexibility is the key! If nothing on the plan appeals, there's always cereal, ramen noodles, peanut butter on toast or crackers, scrambled eggs, etc. :)

  8. Good that you use your leftovers! I don't mind eating the same things, but husband and son aren't so good on it, so I try to make limited portions or freeze to reheat at a later date (or the next week).

    Yum - Let's hear it for Rice, Sausage & Green Beans!

    We eat all the leftovers in this house! I LOVE leftovers because that means I don't have to cook. Well, I have to cook but you know what I mean. I try to change things up on the second (maybe third!) round of a dish. Adding a different side dish, changing something here and there.
    My husband will eat anything. Never complains - never says, "this again?" lol
    I read other blogs & comments and know I'm really lucky in that respect (and many others too)

    1. It is good that your husband isn't fussy about leftovers. :)

      If anyone complains about leftovers in this household, it is probably me! I will, sometimes, cook something different, because I don't want to eat the same thing for a 3rd day in a row, BUT, I will eat the leftovers the next day! My daughter is very good about eating leftovers and she will often eat something if I don't feel like eating it! Once she goes back, I will have to either cook smaller quantities for myself for just one or two meals or freeze the extra portions to have another day, later on. :)
