Buffalo Chicken Wontons and Ice Cream 
Compliments of Neighbor S and Daughter N

Thank you, everyone, for your concern and caring comments about my fall.  Last night, I felt a little achy and took a Tylenol before I went to sleep.  This morning, I slept in most of the morning and woke up feeling quite well!  Thank goodness for that!  Nevertheless, I took it easy and mostly relaxed.  It was another sunny and warm day, which was lovely!

Cousin N had texted while I was sleeping in (I woke up when I heard her text coming through, but, decided to sleep a bit longer); I returned her text once I was up.  She was checking up on me and I was told not to go chasing after rabbits!  LOL.  Her mother, Aunt C called, too, to ask how I was.

Today, I made pancakes for brunch.  I must admit that I cheat and use a boxed mix - the store brand "complete buttermilk pancake - just add water" mix - when I make American style pancakes!  I have only once made American style pancakes from scratch and I must not have done it properly, because I didn't much like them!  They were too dense, not light and fluffy!  I make the thin pancakes that I grew up eating from scratch.  But, today, I made American style pancakes from the boxed mix and warmed up some ham slices that I had in the freezer to go with them.  Then, I did the dishes and scrubbed the stove top!

In the afternoon, I did two loads of laundry.  I always feel that I've been productive when I do a load or two of laundry!  LOL.

For dinner, I cooked a package of mild Italian sausages with sliced onions, bell pepper strips (from the garden!) and slices of zucchini (from the garden, of course!), thawed and reheated a container of homemade pasta sauce made with tomatoes from the garden, and boiled some spaghetti.  It made a nice dinner and there are enough leftovers for another meal.  

This evening, we were also treated to a plate of Buffalo chicken wontons (made by neighbor S's daughter N) and chocolate coated vanilla cheesecake with poppy seeds ice cream bars, which neighbor S brought over!  The fried wontons were delicious and I called N to thank her and ask her for recipe directions.  Apparently, it is based on a copycat recipe she found online for an appetizer served at a restaurant!  I think my next grocery order will include wonton wrappers!  LOL!

After dinner, I had a chat with friend R.

Today, I am grateful for:

- Feeling OK after yesterday's fall
- Wonderful neighbors like S and her daughter N
- Caring friends and family
- Working appliances
- Sunny, warm days

Today's joyful activity was chatting with family and friends.

Plans for tomorrow include putting in a grocery order.  According to the news, there are shortages and empty store shelves due to disruptions in the supply chains!  I haven't been inside a grocery store since the beginning of the pandemic, so, I really don't know what is available or not!  I guess I will just put in my order as I usually do and then, see what happens.  The store will let me know if they need to make substitutions or if an item is unavailable.

  1. I'm sorry to learn you've had a fall and glad that you are feeling better now. Nothing wrong with a packet mix if the result is good and tasty, not always the case I've found. I made some dumplings from a boxed mix last week and they were delicious far better than I could have made. I have received everything from my weekly online grocery order but there are unavailable items when I'm ordering. I did call into a store for dog food and noticed how bare the shelves were looking. I think the shortages are a global problem. Take care.

    1. I'm feeling a bit sore, today, Eileen, but, nothing broken and no bruising, so I think I got off very lightly! I'm glad you were able to get all the items you ordered. I do hope the shortages will be a temporary thing, but, it is a bit sobering to think about how very dependent we all are on the system working smoothly!

  2. I haven't noticed any shortages in the stores around here, but Costco is limiting the amount of bottled water an toilet paper you can buy.

    1. That's good to know that you haven't noticed any shortages in your area, June. I suppose Costco and other stores learned from last year, when people just bought as much as they could and didn't leave enough for others; I no longer have a Costco membership, but, I'm glad they are limiting quantities. :)

  3. It's good to hear you are feeling fine after your fall and there are no lingering issues.

    Yes, there are shortages here but nothing that has really affected me too much. It seems to be more to do with logistical issues around getting supplies to the stores rather than an actual shortage of the products though.

    I'm planning to go shopping tomorrow to buy some gifts, treats for myself and an aubergine to try out my new recipe!

    1. Thank you, Eileen; I am feeling just a little sore, today, but, otherwise, OK.

      I think the shortages here, too, are due to a glitch in the movement of the goods! All the supplies are sitting off shore on the cargo ships that are waiting to be unloaded and the unloaded goods are waiting to be trucked to the warehouses and, from there, to the store shelves!

      Oh, enjoy your shopping, tomorrow! I am starting to think of holiday gifts, myself, and my daughter has already started making some for her friends. :)

  4. So glad that you woke up feeling fine and that you have been taking it easy to be on the safe side.
    I wonder if restaurants use that packaged pancake mix, as I have seen high fluffy pancakes served. When I make that style from scratch mine are not high and fluffy, but if I make them with gluten-free flour for DS and DDIL, they seem to come out a lot better and taste good, too. I have been thinking to look for a better recipe with regular flour.
    That was a nice treat from S, and those ice cream bars sound good. I snuck downstairs in the middle of last night and ate a plain vanilla ice cream bar with chocolate coating! (I woke up and couldn't get back to sleep and it seemed like a great excuse to indulge.)

      I wouldn't be surprised if many restaurants and pancake places started with a mix! I might try making them from scratch one more time, but, the mix is convenient! :)
      Waking up in the middle of the night and not being able to go back to sleep sounds like a very good excuse to indulge in an ice cream bar, to me! It's something I would do, myself! :D These days, I'm up till so late, anyway, that I have my treat before I go to bed! I pass it off as breakfast! :D

  5. I'm glad you did not have serious side effects from your bunny chasing fall!

    It's funny you should mention homemade pancakes vs using the box mix. Just a couple days ago I made some pancakes for my husband and they turned out just the way you describe. Dense, not fluffy, etc. I remember thinking, "why don't I just use the box" lol
    I think I will pick up a box of the mix. I've seen different ladies on youtube do all kinds of things with the box mix from Walmart that you just add water to.
    I just usually make my own things instead of using the premixed boxes. Maybe this time the box is the best! lol

      Good to know that I'm not the only one who can't get my made from scratch pancakes to turn out fluffy! Most things are better when made from scratch, but, not my pancakes! :D
