Ramen Noodle Stir Fry |
My upper arm has felt a little sore from the vaccination, but, it's not painful enough for me to take a Tylenol. I just relaxed and took it easy for the most part, today.
Neighbor S called in the morning and asked if she could use my recycling bin for some extra items she had to recycle and I said yes, of course. Later in the evening, I took my trash bin and the yard waste bin to the curb for pick up, tomorrow morning.
I made French toast and bacon for brunch, today. But, daughter declined brunch and chose to have leftover rice and curries for a late lunch, instead.
I picked some pea pods and broccoli side shoots from the garden in the evening. I cut up some carrots and the last piece of sauteed chicken that I had in the fridge, added the pea pods and broccoli side shoots to it and made a stir fry with a packet of red rice noodles and regular ramen noodles for dinner.
I also made a chicken curry with a package of chicken thighs I had in the freezer. I haven't made a meal plan, as such, for this week, but, there will be chicken curry, with rice and vegetables a couple of times, and maybe potstickers (from the freezer) one night for a change.
Aunt C and friend R both called to check how I was feeling after the vaccination. I also returned a call from one of my cousins; she had called to let me know that she has moved back to Sri Lanka after living in Australia for several years.
Today, I am grateful for:
- The only side effect being a sore arm
- Being able to help out neighbor S with the use of my recycling bin
- Harvest of pea pods and broccoli from the garden!
- Phone calls from family and friends
- Hot water on tap!
Today's joyful activity was harvesting more vegetables from the garden!

I'm glad you have not experienced any side effects from your vaccine other than the sore arm.
ReplyDeleteWe also had Moderna and my arm hurt for a few days although my husband's did. not.
Your food all sounds very good. Yesterday I made some curried lentils with chicken.
I will probably turn the leftovers into a soup today.

DeleteYour curried lentils and chicken sounds good and I like the idea of turning the leftovers into soup. I have two containers in the freezer with bits and pieces and water from boiling some green lentils, waiting to be turned into soup!
That stir fry looks delicious and how nice that you had fresh vegetables to add to it.
ReplyDeleteAs soon as I saw the peas and the broccoli, I knew that I had to make a stir fry with them! There are two more heads of broccoli to be picked - I am waiting to see if they'll grow any bigger before I pick them. :)

DeleteIt's been just over 30 years since I last visited Sri Lanka. I wouldn't mind going back for a holiday, but, I don't yearn to go back, as such.
Those upper arm vaccinations for regular flu also result in soreness. Good that there was nothing worse with this special vaccine, and I hope it will be fine very soon.
ReplyDeleteMmmm - noodles! We had chicken thighs from the crockpot and I put on some pesto to empty out the jar, and some frozen chopped veggies and some mushrooms. No noodles in the house but some squirly pasta to go with it. More chicken left for another time.
My arm feels much better, today; almost back to normal. Your crockpot chicken sounds good; I use spaghetti when I am out of noodles! :)

DeleteOh - how long was your cousin in Australia? Was it her choice to move back, or just circumstances? My cousin moved as an adult to the USA, without ever having left India before (which I just can't imagine) and settled down really well. I remember at one point there was some vague talk about them returning to India and my uncle advised against, on the basis that she'd never get out again if she did. She is/they are still in the USA, and happy as far as I know.
ReplyDeleteShe had been in Australia for about 10 years, maybe a bit longer, staying with her daughter and daughter's family. She would visit her son (who was in Kenya) and Sri Lanka about once a year or so, and, she visited the U.S. a couple of times, too (her husband used to work for an airline and they received free tickets, even after he retired, I believe). I think it was a combination of circumstances and choice, especially after her son and family moved back to SL, last year. Cousin still has her house in SL, but, her son has opened a retirement villa which sounds really nice!

Michigan, then Louisiana (where I visited them) then Michigan again. But I'm not very up to date on the latest. Now I just remembered, looking back through old emails, before settling in Michigan the first time and prior to marriage, she had studied in CA for a while. She did struggle a bit at first in Michigan. Lonely and cold, and liked Louisiana more!!
DeleteI can relate to "lonely and cold" in Michigan! I went to university in Wisconsin, which is one of the adjoining states. :) Freezing cold and I was the only Sri Lankan for miles around - there were a handful of Indian professors, however, and a couple of them took pity on me and included me in their gatherings, etc.
