Restful Sunday

It's been another sunny day, here, today.  I'm glad because more rain is in the forecast for later this week!  I opened some of the windows and aired out the house for several hours, this afternoon.  But, it gets cold as soon as the sun goes down, so the windows are shut, now, and the security devices, a.k.a. the broom sticks, are in place! 

It has been a quiet, restful day.  I exchanged texts with one of my cousins, this morning, as her second grandson was born, last night.  Later, I called my aunt to congratulate her on becoming a great-grandmother twice over.  And, I called neighbor T to check on her as she didn't call me as usual in the morning; she was fine, she said, but had forgotten to call.  Chatted with her for a bit and promised to call her again, later in the week.  My half-sister called, too, to check on me, which was nice.

I had a cup of tea in the morning, but couldn't decide what to have for breakfast.  So, I decided to have lunch, instead.  But, first, I had to cook:

Red Rice
Red rice is very similar to brown rice; the variety I have is partially polished so it is more pink than red!  Even so, it is considered to be better for some of us than regular white rice.

To go with the rice, I cooked a mackerel curry (using canned mackerel), as well as sauteed green beans , and, sauteed cabbage (both vegetables were cooked with curry powder and other spices).

I measured out 1/3 cup of rice (considered a serving) to my plate, and added the rest of the items:


Sunday Lunch: Rice and Curries
It was a good lunch and my sugar level was well under control when I checked two hours later. 

Later, I had a cup of tea and ate a handful of almonds as a snack.

I haven't had dinner yet, but I will probably have leftovers from lunch, with, perhaps half an apple for dessert.

Today, I am grateful for:
- Cousin's daughter had a safe delivery
- Phone calls with family and friends
- A restful day
- Rice and curry for lunch
- A working heater

Tomorrow, I have an appointment with the physician assistant for a check up.  I need to ask her why she didn't return my phone calls and get a new prescription for the new blood sugar monitor that is covered by my current insurance.

  1. Your lunch looks delicious, Bless. I've never heard of red rice before, although I will be cooking up some brown rice for my lunch later.
    Congratulations to your cousins daughter. It's always lovely to hear of a baby being born.

    1. Thank you, Jules. Brown rice has more fiber than red rice, I've read, so helps one feel fuller. But, I had red rice leftover from when I bought a packet for the almsgiving. I want to finish what I have before I buy something else.

      Yes, a new baby in the family is always exciting, isn't it? They named him after his late great grandfather (my cousin's dad, who was my mother's brother), which I thought was a very nice thing to do.

  2. A delicious sounding meal. I too like to finish things before making something else. If I have starch mid day, no matter how healthy it is, I'm then fighting off sleep over the next few hours.

    1. Thank you, Ratnamurti. Fortunately, starch doesn't seem to have that effect on me. Maybe I'm just used to it? Lunch was always rice, when I was growing up, even when going to school.

  3. I'd be interested to see your mackerel curry recipe ... or have you already published it and I've forgotten about it?

    I haven't heard of red rice either. Reading your answer above, I need the fibre so should stick to brown rice I think, but it's interesting to read about new things.

    1. Eileen, I don't think I ever posted a recipe for my mackerel curry. I will do so, later, today. If you do get a chance to try red rice, do so and see how you like it. :)

  5. Your curries look delicious.
    I was going to ask for the mackerel curry recipe and saw Eileen already had done it. :) I normally stir fry mackerel with onions, and would love to try your recipe.

    1. Thank you, Nil. Broiled meats and stir frys, etc. are all very good, but, every now and then, I need my rice and curries! I will post my recipe for mackerel curry.

      The doctor's appointment went well, thank you. We made some changes to my medication dosages to see if things will work out better, otherwise, I am to keep on doing what I am doing! :)

    1. Thank you, Stephenie. I am trying to eat better, healthier meals, with varying degrees of success! Reducing carbs has been hard for me, because I do love my pastries and cakes!

  7. You are doing great with your eating. You are controlling your sugar well and you food always looks and sounds so good. I imagine the PA tomorrow will tell you to keep it up.

  8. You have done very well cutting down on carbs, and the results are showing up in the blood work. Losing weight is a welcome side effect.
