This month's prayer gathering will be followed by a potluck dinner. I volunteered to bring a dessert. I wanted to make something that was easy, using ingredients I had on hand for the most part. So, I decided to make a cake using a cake mix I had on hand. I baked the cake in a Bundt pan, last night and kept it in the fridge overnight.
This morning, I warmed up half a jar of my homemade lemon marmalade in the microwave until it became a pourable consistency and spread it over the cake:

Later in the afternoon, I went to the grocery store and bought a container of ready-made chocolate frosting (for $1.79). I scooped out half of the frosting into a small bowl and microwaved it for 30 seconds, until it melted and then, spooned the melted frosting on the top of the cake so that it flowed down the sides. Then, kept it in the fridge for the frosting to cool down and set.
After that, I sliced some strawberries and kiwi fruit that I had on hand and arranged them on the cake to decorate it. The strawberry slices are put on with a dab of frosting, which I hope will keep them in place. I tried putting additional kiwi slices under the strawberry "flower" to look like leaves, but they kept sliding down the frosting, so, I picked them off and ate them, with the rest of the fruit trimmings! LOL!
I don't know how the fruit slices will fare on the 35+ mile journey to the prayer gathering! Maybe I should stick some toothpicks to hold them in place and take them out when we get there! Now I have to find a container in which to transport the cake. I don't have a round cake carrier. But I do have a disposable salad bowl with cover; maybe that will work! Hm, maybe this cake wasn't such a good idea, after all! LOL. Maybe I should have made a bread pudding, instead!

ReplyDeleteThanks, Andrea! It did! I stuck several toothpicks to make sure the fruit stayed in place (and took them out before the cake was served). And the salad bowl and cover (used upside down) worked out perfectly as a cake carrier!
DeleteBread pudding may be easier to transport, but it sure won't be as pretty as the cake you made. The cake is beautiful, Bless. And I bet it tastes good, too.

ReplyDeleteThank you, Angela. I hope you make a Bundt cake and decorate in a similar way! One could use different fruits, as well - tinned mandarin orange segments in lieu of, or in addition to, the kiwi, for example. :)
DeleteOh that looks good Bless. I'm sure if you pack it well it will travel fine, you may just have to tidy up the strawberries a little. I think I'd make a trifle and hope that nobody ate any of it so I could bring it home again haha. Enjoy the prayer gathering. xx
ReplyDeleteThank you, Suzanne. I stuck a bunch of toothpicks into the strawberries and that kept them in place! Afterwards, before serving the cake, I pulled out the toothpicks.

ReplyDeleteWe got back from New York Friday evening and we did have the best of time with our three NY grand boys but to be honest my energy was all gone by the end of the week. Once home I had to get some laundry done and repack to leave early Saturday morning. Now at the house of my daughter and am starting to recover energy wise. Enjoyed church thus morning and then we then made a quick visit to the grocery store for some needed items while we are here.

Daughter and her family have gone to Washington DC for a week. They left at 5:00 am Saturday - we are here dog and cat sitting. They live about 40 minutes from us depending on St. Louis traffic. There little dog is high strung and doesn't do well away from their home. Just easier to stay here.

Oh, I see. I'm sure your daughter appreciates you being able to pet sit for her. I guess, in a way, I'm pet sitting for my daughter, too, because Dancer is really her cat! She just couldn't take him up with her when she went to Berkeley. :)

DeleteMy husband and I went to my sister and her family's home for dinner one weekend. We usually each make half of the meal (sometimes I make it before, other times, we bring the ingredients and visit while we cook). She told me on that particular night that she had it all done, so I offered to bring a dessert. I made a couple of loaves of homemade banana walnut bread. Well, I got busy and overcooked it! So, I turned it into a "Buttered-pecan Banana Nut Bread Pudding" using some caramel and other ingredients. lol I was a bit worried, but it ended up being a huge hit!
