She used a peeler to get them super thin and it's surprising how many you can get from one potato. She never really cooked with spices or herbs so it was just salt for us. Well, maybe because I used a knife to cut the piece of potato off and to peel it, so, it made sense to me to use the knife to slice it, too. One less thing for me to wash! Sliced super thinly and place in single layer on a cookie sheet sprayed with Pam (or you can use regular olive oil or cooking oil to lightly coat the pan). Bake on one side until brown, turn them and do same on other side. Lightly sprinkle with salt or spices of your choice. They turn out crisp and less oily than frying. There used to be an independently-owned grocery store, as well, but they went out of business (I really miss it).<br /><br />My homemade chips satisfied the craving and there isn't any left in the cupboard to tempt me.
