I do a backwards "meal plan" if you could call it that. I have a little two year planner with small squares for each day of each month. In them I write what we had for supper that day and when I don't know what to have I check and see what we haven't had for a while and if I have the supplies that is what we have! I probably should get a larger one so that I can add lunch to it. Usually if we have a meatless dish for supper we will have meat of some kind in sandwiches at lunch, and a hearty meat dish for supper often means that we have something like egg salad sandwiches or peanut butter/banana/carrot/lettuce sandwiches (Try it!) for lunch. Very often, with it being just me, I simply make what sounds good to me or, depending how much I feel like cooking, what seems easiest! But, I am trying to have things balanced out so that I don't run out of certain ingredients before I can replenish the stock and meal planning seems like a good way to do that! I put more effor...I do meal plan now on two levels. I put more effort into planning for bulk cooking which I freeze in portions. The aim is to have a wide variety of choice as I don't really like eating the same meal on consecutive days. Part of this planning is to also have the components for meals I can cook 'on the day'. I also do a daily plan which is a rough idea of what the daily meals will be, alternating between 2 meal days and 3 meal days, and these are a combination of portions from the freezer or something I cook on the day.<br /><br />I never really stick to the daily plan. If I have a migraine I wouldn't be eating at all and once I feel better will eat the mini portions I cook up specially for this until I can get back to normal eating. Now that there are just 3 of us, plus extras (which are much less likely to show up since these shutdowns started), so we tend to cook somethings and then eat them for a few days like you do, then cook some more. We fill in with salads, sandwiches, and for our daughter, lots and lots of refried beans on tortillas. We don't mind leftovers and I'm pretty goid at changing leftovers up a bit and making a "new" meal out of the same food which I know you do as well Bless. <br />What I'm not good at is freezing things for future use. I read how you do that with great success. But I find that I just don't use the things I tuck in the freezer and I end up throwing them away - a year later! I'm not a big meal planner ...I get that though. I'm not a big meal planner myself. And I love to make a pasta dish and just eat it until it's gone. Or soup and the same thing, eat it until it's gone. And in the mornings, I like to make an Instant Pot soup with lentils and toss in whatever I have on hand. If there's extra, I'll eat it for lunch or the next morning. <br /><br />You asked how we are managing during this time of staying home and since I work from home anyway, there's been zero change in how I cook. I enjoy it and I LOVE soups and stews so that makes it easy.<br /><br />PS: You mentioned spicy garbanzo beans.
