May Meal Plan Options: Week 1

Ground Beef Keema Curry

It's the first Monday of the month and time to post my meal plan options for the first full week in May.  I plan to cook most of the meals at home, but, daughter wants to pick up a meal from a restaurant of my choice to have at home (we are still not eating out at a restaurant) for Mother's Day. which is on Sunday. 

I made a keema curry on Monday, with a one pound package of ground beef, half an onion, some celery from the garden, two grated carrots, a handful of frozen snowpeas (from last year's garden) cut into small pieces, curry leaves, curry powder, and other spices.  Adding vegetables to the ground beef not only bulks up the meat, but, also helps my vegetable intake!  

Here are this week's meal plan options:   

Brunches:  Scrambled eggs, sausages, toast (Monday); cold cuts sandwiches; tuna salad sandwiches; pancakes or waffles with bacon and syrup; leftovers

Dinners:  Keema curry with rice (daughter) or leftover pancake (me)(Monday); Keema curry with rice and cucumber salad; Chicken curry with rice, broccoli, cucumber salad, and peach chutney; Fried rice; Mother's Day dinner (TBD); Leftovers.

Snacks/Desserts:  Cereal/granola bars, fresh fruit/fruit salad, yogurt, bread pudding, crackers with cheese or peanut butter, lemon bars from my daughter's friend; maybe a peach pie or cheesecake.

  1. We actually had a meal plan for last week and just finished up leftovers last night. I guess it's time to make one for this week. We were getting takeout or eating out more than we wanted, thus the meal planning. It's not something we do all the time.

    1. Yes, I know you've said you don't meal plan on a regular basis; did having a meal plan in place feel odd? Are you making a meal plan again for this week? I find that I am happy to get takeout even with a meal plan in place, but, having a meal plan does help. :)

  2. I am all about bulking up dishes with vegetables and do it all the time.
    Your meals sound delicious.
    We had a week of entirely too many take outs last week. Though I do have 2 lunches out planned for the week, and TheHub has at least 2 planned, The rest of our meals need to be prepared at home.

    1. I am rather picky about eating vegetables, so, I need to "hide" my vegetables for the most part! :D
      I think that, as long as meals out/take out are intentional and planned, they are part of the meal plan. We have at least one planned takeout a month; because I do most of the daily cooking, daughter treats me to a takeout meal once a month. It's a treat I look forward to. :)

  3. Nice variety of meals. Even splurging on a nice meal at home is a lot cheaper than eating out!

    1. Thank you, Sharon. Yes, splurging on a nice meal at home is often cheaper than going out. Sometimes, though, it is nice to have a meal that you didn't have to cook. :)

    1. Thank you, Linda. I will often cook two main dishes a week and have them throughout the week with different side dishes for variety. :)
