Relaxed Days

 

Blueberry Muffins

We are having spring-like temperatures, this week, with daytime highs in the 70s and maybe even the low 80s towards the end of the week!  The evenings and nights are cool, though, 

I have been taking it easy, spending a little time in the garden, knitting my sweater, and doing little things around the house.  Meals have been simple - leftover French toast and scrambled eggs on toast for breakfast, salad with baked chicken for dinner, crackers and peanut butter for snacks, cookies and fruit for dessert.  

But, on Tuesday, I baked a batch of blueberry muffins, using homegrown blueberries I had frozen.  I tweaked my muffin recipe and omitted the salt and the muffins still turned out quite well.  In fact, daughter preferred them to the muffins I generally bake.  

I am grateful for:

- The sunny, warm weather
- Daughter's help with tasks around the house
- Time to relax and knit
- Salad greens from the garden
- Working appliances

Joyful activities have included spending time in the garden, knitting, spending time with my daughter.

Plans for Wednesday include tending to the garden with M, knitting, and maybe ordering groceries.

  2. I'm glad the muffins turned out delicious even without salt. I think baking powder is somewhat salty which compensates. In any case a wee pinch of salt probably wouldn't hurt, compared to the usual recipe requirement.

    1. Thank you, Bushlady. The original recipe called for 3/4 teaspoon of salt and, to be quite honest, I never put that much salt; I would put about 1/2 tsp. and that was fine. I might leave out the salt altogether or add about 1/4 tsp. the next time I make the muffins.

    Low 80's! You'll be walking around barefoot soon with those kinds of temperatures.

    1. The muffins were good and are almost all gone! LOL. I'm loving the current temperatures. Of course it's going to cool off again, next week, and there's even some rain in the forecast for the end of the month. :)

  4. Those muffins look delicious. I got home last week from my sister's, with a bad cold and then hit with the flu. I got the cold from my sister! Fortunately BiL didn't get these. He is home and doing well. It sounds like you have perfect weather for some easy gardening. I am envious! Today the sky here is a deep lovely blue, but of course that means it's very cold. I hope you continue resting and relaxing. I am being quite lazy! It's good to be retired!

      I'm so sorry to hear that you came down with a cold AND the flu! I'm glad your BiL didn't get the cold from your sister. Yes, we are having good gardening weather. M is busy pruning the fruit trees and the roses.
      I hope you continue to relax and take it easy, yourself, after your recent bout of flu. Retirement does have its perks, doesn't it? :D

  6. Glad the muffins turned out well despite no salt. Good to know it's not needed in this recipe. (Was the butter salted or unsalted? Might have factored in?)

    1. Thank you, Lady Ella. There is no butter in this recipe (I copied it from an old cookbook a long time ago; back in the 1980s, I think). There's flour (1 3/4 cups), sugar (1/4 c). baking powder (2 1/2 tsp), salt (3/4 tsp. which I omitted), one egg, 2/3 c milk, and 1/3 c vegetable oil. Mix dry ingredients together, stir wet ingredients together and add to the dry ingredients. I almost always add fruit and nuts to this mixture. Sometimes, I add a little ground cinnamon (but, didn't do so, this time).
