Easy Gelatin Dessert

This is a recipe one of my cousins shared with me, many years ago.  I don't know where she learned of it.  It is one of the easiest desserts to make and one which can be varied depending on the flavor of gelatin that is chosen.

I made it for the prayer meeting, using raspberry flavored gelatin, since it is one of my daughter's favorite flavors.  I prefer it made with lime flavored gelatin, both for the taste and the color!

Step 1:  Make the gelatin according to the instructions on the box (mix with 1 cup of boiling water and then, add 1 cup of cold water); refrigerate until set.  One can do this in the morning of the day if the dessert isn't needed until later that day.  I chose to do it a day or so early, as it was easier for me - one less thing to do on a busy morning.

Step 2:  Spoon the set gelatin into a blender and blend for a few seconds; then, add a can of sweetened condensed milk and blend!

Step 3:  Pour the resulting mixture into a mold or serving dish.  I poured it into my Bundt cake pan:

The mixture will already be rather "gloppy" (nice, descriptive term, isn't it?); refrigerate it until needed.

When it was time to serve the desserts, I placed a plate over the Bundt pan and turned the whole thing up-side-down to un-mold the dessert on to the plate.  Then, I filled the middle with some blackberries and placed more blackberries around the base of the gelatin to decorate it.  If I had raspberries, I'd have used them, instead, but the store I went to buy the fruits didn't have raspberries.

I'm sorry, but I didn't remember to take a picture of the finished dessert before it was served.  But I took a picture of some that I served to a bowl, today:

If you can get past the neon pink color, it is a light, refreshing dessert.  :)


I have also made this dessert with orange flavored gelatin and used canned mandarin orange segments to decorate it.  And, as I mentioned earlier, the lime flavored version is my favorite.

I've had a similar version of flavored gelatin mixed with cottage cheese, which was served as a salad at a luncheon I attended.  I suppose one could use yogurt or sour cream, as well.

  1. That sounds really good! I have had the lime gelatin with cottage cheese and pineapple dessert that my grandmother used to make and it was really good. Have you had that one? I'll have to see if I can find the recipe for it and share it.

    1. I don't think I've had it, Debbie, but it does sound very good. I like anything with pineapple in it!

  2. Oh wow, this is so easy to make and it looks yummy! If I had a can of sweetened condensed milk I could make this tonight. Oh wait, I guess I would need some raspberries too. And a box of gelatin.

    When we were kids, my dad would sometimes give us dessert and it would usually be something quick and simple and whatever we had on hand. The dessert that comes to my mind the most is simply some peanut butter and jelly on crackers. We didn't really have things like cake or cookies or anything in the house unless it was a holiday or special occasion, but we really didn't miss it. We always enjoyed our pb&j crackers and we felt like it was a really special treat if we had a jar of marshmallow fluff in the cupboard cause my dad used that in place of jelly. I guess the apple does not fall too far from the tree cause I find that to be a snack that I often give my own little rascals and they seem to enjoy it too. Some other easy go to snacks or desserts for us are homemade popcorn, a bowl of cereal or fruit. And of course we do indulge ourselves at times with the delightfully unhealthy snacks such as cookies, brownies or ice cream. (We can't completely deprive ourselves now, can we?!) ;)

    1. PB&J crackers sound like a great dessert or snack! I didn't have my first taste of peanut butter until I was 11 years old, when an American visitor gave me some. It wasn't available in my country of birth when I was growing up. :) Ice cream was always a favorite treat, of course.

  3. My former mother-in-law made the most delicious cranberry mold for Thanksgiving by using cranberry-flavored Jello, sour cream and whole cranberry sauce. I'll bet she used the same technique as you used for your dessert, which I want to try, by the way. I love sweetened condensed milk (a little too much!).

    And, Bless, I didn't have peanut butter until I was 18 (we didn't have it in France either) and I thought it was disgusting! Now I like it but I don't like peanut butter-flavored stuff.

  4. This sounds so good. I love gelatin and make it quiet often.. I have not had this recipe though..
    I have had the lime jello /pineapple recipe that Debbie told about, it is so good.

  6. I once made a dessert that had a similar creamy base and included chunks of coloured gelatin which had been allowed to set beforehand and then cut into cubes. It looked pretty and was called Crown Jewel dessert, but it had synthetic cream topping in the creamy part and I don't care to use that anymore, but the condensed milk version would be good.

  8. Does it set again once it's in the bundt pan? I like gelatin desserts well enough to eat them at family dinners but not quite enough to make them for myself. ;) I do like plain jello, though.

    A favorite simple dessert is ice cream, chocolate syrup and chopped peanuts. i also often make a crumb cake which is easy and fantastic.

    1. It does set somewhat, but it doesn't become as firm as the gelatin by itself. The ice cream with syrup and nuts would have been a good dessert, too!

  9. This is a blast from the past! My (English) grandmother used to make something like this (and then my mother too). However we used evaporated milk, rather than condensed, and I seem to remember that it was added before the jelly had set, so the whole thing set together. I will have to ask Mum if she remembers! The result was a kind of mousse.

    2. Yes, as I say, I think so, but I can't recall whether it was whisked or just mixed. I think lightly beaten, possibly with a spoon, just so it was all combined. However I do remember that sometimes thin "strata" of jelly were found in the mousse where it had not blended entirely, and you only saw it once it had been spooned out and served up. I liked finding those jelly bits and enjoying the overall texture!

      I will definitely ask Mum and the rest of the family if they remember!

    8. Actually I am a little disappointed that she asked for the ingredients, as I wanted to make it as a surprise, either for her birthday or for mother's day. It's Dad who was getting nostalgic (his Mum used to make it) so they asked me to buy the stuff. I was going to stall but have now bought it and will deliver it over the weekend. I can always make it next month too. Have been discussing with sister how or what we will do to mark the occasion (it is a "big" birthday). Technically only one of us should enter the house (under bubble rules) so it would probably be me as sister visited them for Dad's birthday - luckily she had just had a routine test so we knew it would be safe. Anyway, we are still talking and trying to decide what is for the best - maybe we will both get tested again and go ... M&D have had a lonely and dispiriting year (as we all have) and Mum's health problems are a concern, so it may be a case of making the most of this occasion. Whatever we do won't be what we'd have done in an ideal world, but we still want to make it as special as we can in the circumstances.
