Kohlrabi Salad

Kohlrabi/Apple/Carrot Salad with Dried Cranberries


I made my kohlrabi salad, today!

I had bought a small kohlrabi, the smallest I could find, because I wasn't sure if I would like it.  It's a vegetable I had eaten and not cared for much, as a child.  I have always eaten it cooked, but my friend had suggested eating it raw, so I was going to try it.

First, I cut it in half:

I decided to try the salad with only one of the halves; I kept the other half in the fridge for another time.  Then, I peeled the half I was going to use and cut into small pieces:

I tried a small piece of the kohlrabi by itself, without any salt or anything, and it tasted OK.  It reminded me a bit of radish, but without the peppery-ness of radish.  It also tasted a bit like broccoli stems.

I cut two pieces from a Granny Smith apple and added that to the kohlrabi:

I cut the apple slices into small pieces and did the same with a carrot.  Then, added dried cranberries, a little salt and lemon juice.  And it made a pretty good salad.  The lemon juice improves the taste of the kohlrabi - the pieces that were at the bottom of the bowl which marinated in the lemon juice-salt mixture the longest tasted quite mild.  If I make this salad another time, I will leave it to marinate for 20-30 minutes before eating it.  I didn't add any nuts to it, but they would be a good addition to the salad.    

I am wondering whether to cook the other half of the kohlrabi or make another salad.  I'm thinking I will cook it to see if I like it that way.

Today's dinner was kohlrabi salad, bread, and beef curry.

  2. BLess I have never heard of it.. I haven't seen any [I don't think???] in our grocery stores or farmer's market. Probably doesn't grow in our area..
    Your salad sounds good though.

    1. Judy, it's quite possible that you never noticed it. When I am in the grocery store, I tend to make a bee-line to those vegetables I have already decided to buy and they tend to be the ones I always buy: green beans, carrots, broccoli, etc. Next time you are at the store or market, check around and you'll probably find some kohlrabi. :)

  3. I have heard of it, but have never tried it or actually even considered it. Maybe it's because you just don't see a lot of recipes with it.

    DH and I have been trying new things like making noodles from squash and zucchini instead of using pasta. I also made spaghetti squash recently for the first time. We had eaten it but never cooked at home. We are planning to try making "rice" from cauliflower. Cauliflower definitely isn't one of my favorites so this should be interesting. I will look for kohlrabi at the grocery store next time I go. I looked online and found a recipe for roasting it. I like roasted veggies, so maybe I'll be adding something new to my kitchen.

    1. It's good to try something new and different. I didn't much care for vegetables as a child, and so, would only eat the few that I did like. I just continued that habit as an adult, too, sticking to what I knew I liked. Daughter, on the other hand, loves vegetables and is willing to try new things. I think the kohlrabi roasted would taste quite good. Let me know what you think of it, if you try it.
